Mom's Sage Dressing ( Stuffing )

This recipe comes to us from, Betty Ann Reid (BL's Mom)
adapted to GFCF by BL, and is a favorite for our Canadian Thanksgiving dinner.
List of Ingredients
1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped apple
1/4 cup CF margarine, olive oil or coconut oil
6 cups chopped 1/2 " x 1/2-inch stale GFCF bread
1 tablespoon dried sage
1 teaspoon dried thyme
2 cups chicken stock
Recipe
1. Prepare onion, celery, apple & bread.
2. In a large skillet on medium heat, melt oil, add onion, apple &celery & saute till tender about 5 minutes.
3. Add bread & spices stirring & turning to get all ingredients combined evenly.
4. Add chicken stock in small amounts being careful not to
completely soak bread. You just want to moisten the bread.
5. Either stuff in the cavity of the turkey or bake in a parchment pouch in a pan in the same oven as a roasting turkey.
BL's Notes:
If you prefer to use fresh herbs, double the quantity and make a bouguet garni which can be easily removed from the stuffing at serving time.
