    Today we discovered that one of our Miss Roben's Gingerbread Cake Mixes had a small hole and since Gingerbread is special occasion food around here, we opted to come up with something else - Spiced Pancakes

    List of Ingredients




    1 package Miss Robens Gingerbread (cake - not cookie) mix
    2 eggs or 2 jars of Stage 1 carrots plus 2 tsp of aluminium-free baking powder
    1 1/2 cups of water
    1/4 cup of canola oil
    2 more tsp of aluminium-free baking powder (if you like thick high stacks)

    Recipe



    Combine all ingredients and set aside about 10 minutes for the gf flours to absorb the liquid.

    Preheat griddle to 350 in the meantime.

    Spray with pam (or mist with cooking oil).

    Dollop pancakes onto griddle.

    I used 1/4 cup measure for regular pancakes and 1/8 for silver dollar pancakes for my husband who prefers 2 bite foods - lol.

    Wait until bubbles form.

    Flip.

    Repeat :-)

    Note from BL: These are great served with pear sauce, apple sauce, fruit preserves or my husband says just a dollop of cf margarine.
