    Smokey BBQ Weiner Bread

    Recipe Introduction

    I challenged myself to find new ways to use the Miss Roben's White Sandwich Bread Mix to appeal to my three teens and my husband. Here's one of the really successful, egg-, dairy-, soy-, corn, nut- and gluten-free recipes.

    List of Ingredients

    1 package Miss Roben's White Sandwich Bread Mix
    2 jars (4.5 fl oz) Beginner (Stage 1) baby food*
    1/4 c salba seeds
    1/4 cup flax seeds or meal
    3 tbsp oil
    8 - 10 splashes of liquid smoke (or to taste)
    1/4 cup safe BBQ sauce
    3/4 - 1 c blood temp water
    2 - 3 weiners cut in rounds or half

    *or 1 large egg and 1 egg white (room temp) OR 1 jar of puree and 1 large egg (both room temp)


    Recipe

    Combine the wet ingredients in a metal or glass bowl EXCEPT the water. All liquids need to be at room temperature. Whisk in the seeds.

    Add 1/2 of the packaged mix and stir to combine until smooth. Add 1/2 the water and the remaining mix. Stir to combine. If mixture is thick, add another 1/4 cup of water and stir. Mixture should be pourable but not runny. You can always add more water, but you can't take it away. ADD THE WATER SLOWLY.

    Grease a glass bread pan and/or line with parchment. Pour in 1/3 of the batter, layer precut weiners over (I prefer the disks). Pour in the next 1/3 and again layer with weiners. Finally cover with the remaining batter.

    Set aside in a warm place with no drafts for 20 minutes. Bake at 325 for 40 - 50 minutes or until a toothpick inserted comes out clean.

    Serve warm or let cool, slice and freeze to use on rushed days.

    This bread works best if it bakes with a tinfoil pyramid placed on top of it during the whole baking cycle. Without the hat, it easily browns too quickly on the outside. Hat should look something like this: _/\_ The two ends are open so the steam can escape, but the pyramid shape helps redirect heat into the centre of the loaf to encourage more even cooking between the crust and the inside of the loaf.

    If you need yeast free, omit the yeast packet and add 2 additional tsp of baking powder to "help" that veggie puree.
