    Plum Ketchup

    Recipe Introduction

    From "The Allergy Self-Help Cookbook" by Marjorie H. Jones, RN

    List of Ingredients

    1 lb of Italian plums, pitted
    2 Tbls finely chopped, fresh ginger
    1/3 cup finely chopped onion (optional)
    1/3 cup agave or raw honey
    Pinch of sea salt
    2/3 cup pineapple juice or water (if citrus-free)

    Recipe

    In a blender or food processor, combine the plums and ginger.

    Process for 1-2 minutes until smooth.

    Pour into saucepan.

    Add the onion if using, the agave/honey, salt, and juice or water.

    Cook, stirring occasionally, for 20 minutes, or until it thickens up.

    Adjust seasoning to taste.

    Makes about 1 1/2 cup of ketchup.

    Author's Note: This ketchup freezes nicely for up to 6 months.
