    Lori has been experimenting with Salba and came up with this recipe for a substitute in 1 egg recipes.

    List of Ingredients

    2 Tbls ground salba
    1/2 cup cold water

    Recipe

    Combine ingredients and use in place of 1 egg in recipes requiring 1 egg.

    Lori's Notes:I started fooling around with salba as an egg substitute since I have a lady at work that is a vegan. I made a gel as directed below (information from the salba site) and repalced 1 egg in a raisin bar recipe. It worked wonderfully. I will use it again when I have a recipe with one egg. I do not think it would work as well for a 2 egg recipe due to the leavening aspect but I may try it first before I would say that for sure. Salba is gluten-free and makes an excellent substitute for flour (1 part ground salba replaces 3 parts flour). It can be used as an effective thickener for gravy, soups, or sauces and can replace eggs in any recipe. (Combining 2 Tbsp of ground salba and 1/2 cup of cold water can be used in place of one egg.)
