Sunflower Burgers

List of Ingredients
1/2 cup textured vegetables protein
1/2 cup boiling water
1 cup sunflower seeds
1 cup cooked brown rice
1/2 cup grated carrots
3 eggs
1/2 tsp salt
1 tsp black pepper
1/2 tsp chili powder
Up to 1 tbsp canola, peanut, safflower or corn oil
7 slices low-fat cheese, optionalRecipe
Combine the textured vegetable protein and boiling water in a measuring cup. Let sit about 15 minutes to increase volume.
Grind the sunflower seeds in a food processor for about 45 seconds. Add the soaked textured vegetable protein, brown rice, carrots, eggs, salt, pepper and chili powder to the food processor and puree until combined.
Make 7 patties out of the sunflower seed mixture. Heat the oil in the nonstick skillet over medium heat. Brown patties for 3 minutes on each side in the heated skillet.
If you want cheese on top, add the cheese during the last minute of cooking until it all melts.
