gf mayonaise
gf/cf milk sub
Magic Dust (filed under MYO Spice Blends)
Recipe
Heat oven to 350 degrees F and line baking sheet with parchment paper.
Peel eggplant and slice in 1/2" rounds.
With tines of fork pierce each side of the eggplant rounds
several times.
In a bowl add some mayo and a little milk sub to thin.
Stir mayo mixture until well blended.
Dip the rounds first in the mayo mixture then sprinkle with the magic dust on both sides.
Place on the lined baking sheet.
Bake for 30 minutes.
Donna's Notes: The eggplant will be soft and tasteful. I have been out of dried mustard and used a mayo/mustard mixture to dip the eggplant in and made the magic dust minus the dried mustard and it still came out well. This works for almost any item you wish to bbq.
