Cucumer Pob (Baked Cucumber)

List of Ingredients
1 large cucumber, peeled and cubed
150ml potato or other milk
1 tbsp rice or other gf flour
salt and black pepper
30g cf margarine
sprig of mint
1 slice of lemonRecipe
Season the rice flour with salt and black pepper and use this mixture to cover the cucumber cubes.
Transfer to a baking dish that's been greased.
Add the potato milk and cover the dish with a lid before
transferring to an oven pre-heated to 200°C (390°). After about 15 minutes add the mint and lemon and bake for about 10 minutes more.
Serve hot as an accompaniment.
