    Orange-glazed Sweet Potatoes

    A nice touch to a special meal.

    List of Ingredients




    6 med, sweet potatoes
    1/2 c. boiling water
    1 T. orange juice
    3/4 c. light or dark corn or cane syrup
    2 tsp. salt
    3 T. GFCF margarine
    1/2 T. grated orange rind
    1/4 c. brown sugar

    Recipe



    Peel and halve potatoes and place in saucepan. Simmer uncovered in salted boiling water for 15 minutes or until tender; drain, reserving 1/2 cup liquid.

    Dot potatoes with margarine. Combine reserved liquid and remaining ingredients. Pour over potatoes.

    Simmer for 15 minutes or until glazed, basting frequently.

    Turn potatoes once.

    Serve while still hot.
