Zucchini Pie

List of Ingredients
2 cups chopped zucchini
2 cups sugar
2 cups evaporated milk sub (See recipe filed under MYO)
2 eggs
3 Tbls soft cf margarine
1/2 teaspoon salt
2 teaspoons vanilla
1 unbaked 9-inch gf cf pie shell (recipe filed under pies)
Recipe
Cook zucchini in a small amount of water until tender (about 10 minutes).
Drain.
Put all ingredients (minus the pie shell) in a blender & blend for about 1 minute.
Pour into pie shell.
Sprinkle with cinnamon & nutmeg (or Allspice).
Bake at 400 for 15 minutes.
Lower temperature to 350 cook for an additional 30- 45 minutes or until a knife inserted 1/2" from side comes out clean.
This recipe is for a regular 9 inch pie plate.
If you are using the small aluminum pans either use 2 or halve the recipe.
