    FRENCH LEMON BARS

    List of Ingredients


    • CRUST:
    • 2 c. flour
    • 1/2 c. confectioners sugar
    • 1 c. margarine
    • FILLING:
    • 4 eggs
    • 2 c. sugar
    • 1/3 c. lemon juice
    • 1/4 c. flour
    • 1/2 tsp. baking powder


    Instructions


    1. Crust: Sift together the flour and confectioners sugaar. Cut in the margarine to a crumb stage.

    2. Press in a lightly greased 9x13 inch pan. Bake this crust at 350 degrees for 20 minutes.

    3. Filling: Beat the eggs until foamy. Gradually add the sugar and lemon juice; beat until smooth and fluffy.

    4. Sift together the 1/4 c. flour and baking powder; mix into egg mixture.

    5. Pour over the baked crust.

    6. Bake at 350 degrees for 25 minutes. Cool in pan.

    7. Sift confectioners sugar over the top.

    8. Makes 30 bar cookies.
