FRENCH LEMON BARS

List of Ingredients
- CRUST:
- 2 c. flour
- 1/2 c. confectioners sugar
- 1 c. margarine
- FILLING:
- 4 eggs
- 2 c. sugar
- 1/3 c. lemon juice
- 1/4 c. flour
- 1/2 tsp. baking powder
Instructions
- Crust: Sift together the flour and confectioners sugaar. Cut in the margarine to a crumb stage.
- Press in a lightly greased 9x13 inch pan. Bake this crust at 350 degrees for 20 minutes.
- Filling: Beat the eggs until foamy. Gradually add the sugar and lemon juice; beat until smooth and fluffy.
- Sift together the 1/4 c. flour and baking powder; mix into egg mixture.
- Pour over the baked crust.
- Bake at 350 degrees for 25 minutes. Cool in pan.
- Sift confectioners sugar over the top.
- Makes 30 bar cookies.
