RICE PUDDING with LEMON SAUCE

Recipe Introduction
For an optional great topping on the Rice Pudding use the Lemon Sauce recipe included.
List of Ingredients
2 cups rice, cooked
5 eggs
1 cup sugar
1/4 cup butter or oleo, melted
2 cups milk
1 tsp. vanilla
1/4 tsp. nutmeg
1/2 cup raisins (optional)Recipe
Beat eggs; add sugar, butter, milk, vanilla and nutmeg. Add the rice and raisins (if desired).
Pour into a greased 2-quart casserole.
Bake at 350 degrees for 45 minutes.
LEMON SAUCE:
1 cup sugar
1 tbsp. cornstarch
1/2 tsp. salt
3 eggs, slightly beaten
juice of 2 lemons
rind of 2 lemons, grated
1 cup water
2 tbsp. butter
Mix sugar, cornstarch and salt. Add eggs, lemon juice, grated rind and water. Cook until thick, stirring constantly. Add butter and let cool.
