    ZUCCHINI BREAD

    Great way to use your Zucchini supply!
    This is a nice moist bread.

    List of Ingredients




    3 Eggs
    1 Cup Unsweetened Applesauce (replaces oil)
    1 1/2 Cups sugar
    2 tsp. Vanilla
    2 Cups shredded Zucchini
    1 Cup drained, Crushed Pineapple
    3 Cups Flour
    2 tsp. Baking Soda
    1 tsp. salt
    1/2 tsp. Baking Powder
    1 1/2 tsp. Cinnamon
    3/4 Cup Raisins
    1 Cup chopped Walnuts or Pecans (Optional)

    Recipe



    Beat eggs with applesauce, sugar and vanilla until fluffy.

    Stir in Zucchini and Pineapple.

    Mix flour, baking soda, baking powder and cinnamon. Add to mixture. (Stir just until well blended)

    Add raisins and nuts.

    Pour into 2 greased loaf pans.

    Bake at 350 degrees for 45 to 50 minutes. (Check with a toothpick in center for doneness)

    Freezes well.


    NOTE: I freeze grated Zucchini from my garden to use in this bread. Shred, fill bags and freeze. Place bag in a bowl in refrigerator to thaw overnight. (Pour off most of the water from the thawed Zucchini)
