    This is a great fall recipe.

    List of Ingredients




    2 c. gingersnap crumbs
    7 T. butter, melted
    1 2/3 cups plus 1/4 c. sugar, divided
    2 c. flour
    1 T. cinnamon
    2 t. baking powder
    1 t. baking soda
    1 t. salt
    4 eggs
    1 c. finely chopped peeled apple
    1 15oz. can pumpkin puree
    1 c. canola oil
    1 16oz. can cream cheese frosting (or make your own )

    Recipe



    Preheat oven to 350 degrees. Spray a 15x11" pan. Set aside.
    In a small bowl, mix gingerbread crumbs, butter and 1/4 c. sugar until well combines. spread mixture into prepare pan. Smooth evenly out to form a crust.

    Bake crust 6 minutes, let cool completely.
    In a medium bowl, combine flour, cinnamon, baking powder, soda and salt.

    In a separate bowl, beat eggs, remaining sugar, apples, pumpkin and oil. Stir into flour mixture.

    Spread pumpkin mixture evenly over crust.
    Bake until filling pulls away from the pan about 25-30 minutes.

    let cool completely before frosting.
