Brandied Apricot Jam

List of Ingredients
- 1 orange
- 2 cups halved dried opricots
- 2 1/2 cups water
- 1 1/4 cups sugar
- 1/2 teas. almond extract
- 1/4 teas. freshly grated nutmeg or ground
- 3 Tbs brandy
Instructions
- Remove the zest from the orange and squeeze its juice into a small, heavy saucepan. Add the apricots, orange zest and water. Cover and refrigerate overnight.
- The next day, bring the mixture to a boil, lower the heat and simmer for 5 minutes. Add the sugar and continue to boil, stirring gently and continuously for about 20 mins. When the mixture becomes thick, be careful not to touch the apricots. Remove from the heat, add the almond extract, nutmeg and brandy and mix gently.
- Pour into sterilized jars and cover with the lids. Allow to mellow for a couple of weeks before serving. May be kept for several months.
- Makes 3 8oz jars.
