    Salad with Sesame-Orange Dressing

    Recipe Introduction


    This recipe, like most of my recipes has been adapted from some other recipe--origin unknown.

    The dressing on this salad is one of the FEW low fat /no fat foods that I can say I really like.

    Slivered water chestnuts can be used in place of the jacama.


    List of Ingredients


    • Mixed Salad Greens
    • Orange Pieces
    • Sliced Green Onions
    • Grated Jicama (a root vegetable from Mexico)
    • 1/2 cup freshly squeezed orange juice
    • 1 Tbs. honey
    • 1 tea. white vinegar
    • 1 tea. dark sesame oil
    • 2 tea. grated fresh ginger (or to taste) I use more
    • 1 tea. low-sodium soy sauce
    • 1/2 tea. toasted sesame seeds (regular or black)


    Instructions


    1. For the dressing: in a small bowl, whisk together all ingredients making sure the honey is well blended. This will keep in the refrigerator for 3 or 4 days and makes about 1/2 cup.



    Final Comments


    You can make this a MAIN DISH SALAD by adding strips of mustard glazed chicken breast to the greens.
