strawberry cream surprise

1 angel food tube cake
1 3 ounce box instant vanilla pudding
1 8 ounce can crushed pineapple, DO NOT drain
2 cups whipping cream
1 cup sliced strawberries(frozen are good, thaw first)
1/2 cup chopped pecans or walnuts
2 to 4 TBLS. white rum
Whole strawberries, pecan halves, and mint leaves for garnish
Recipe
Cut top of cake 1 inch down from the top. Make a tunnel in bottom part of cake, 1 inch from the sides and bottom, scooping carefully. Mix dry pudding and pineapple (juice and all); let stand. Whip cream; add nuts, sliced strawberries and pineapple mixture to whipped cream. Fold completely. Sprinkle rum around inside the tunnel and cake top. Fill tunnel with 1/2 cream mixture. Put top back on cake and press gently to seal. Frost cake with remainder of cream mixture; decorate with whole strawberries and pecans and mint leaves. I use the berries and mint leaves to creat a bough around the sides of the cake, and place pecans on the top. Store in fridge until served.
