    • 4 Boneless chicken breasy
    • 1 can Ro-Tel tomatoes
    • 2c.Mozzarella cheese ,grated
    • 4c.cooked rice(any kind will do)i've used white and yellow


    Instructions


    1. Brown chicken in a nonstick pan sprayed with PAM.cook until done.Add the tomatoes and cook over low heat until well heated.Add cheese and continue to cook over low heat until cheese melts.Serve over cooked rice.
