    Alabama Caviar


    2 (15 1/2 oz.) cans blackeyed peas (drained)
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1/2 clove garlic
    1/4 cup sugar
    1/4 cup vinegar
    1 1/2 teaspoons salt
    Pepper and hot sauce to taste

    Place toothpick in garlic clove. Mix peas, onion, green pepper and garlic. Dissolve sugar, vinegar, and salt over low heat. Mix all ingredients, adding desired black pepper and hot sauce. Refrigerate 12 hours. Remove garlic clove. Serve with Frito corn chips.
