    Mom's Cheesecake

    Source of Recipe

    My mother-in-law

    List of Ingredients

    Crust:*
2 cups graham cracker crumbs (reserve 1/2 cup)
    1/2 cup melted butter
    2 Tbsp Sugar

    Filling:
    1 8-oz pkg cream cheese**
    2 cups milk
1 (six serving size) pkg vanilla instant Jell-O pudding

    Recipe

    Crust:
Place graham crackers between two sheets of plastic or inside clean bread wrapper. Use rolling pin to crush fine. Measure 1 1/2 cups and combine with melted butter and sugar. Stir to blend mixture well. Turn into 9" pie pan or plate and press firmly against the sides and bottom of pan until the crust is about 1/8" thick. Chill for two hours before adding filling.

    Filling:
Lay out package of cream cheese for one hour before making mix.

Soften cream cheese, blend with 1/2 cup milk. Add remaining milk and pudding mix. Blend on low mixer speed for about one minute (do not overbeat).

Pour into chilled graham cracker crust. Sprinkle reserved graham cracker crumbs lightly on top. Chill for at least 1 hour. It's better if chilled overnight.

    Enjoy!

    * I'm lazy and buy a ready-made graham cracker crust. ;)
** My sister-in-law and I find it's a LOT easier to work with an 8-oz container of whipped cream cheese than the brick. Also, with the whipped cream cheese I find I can whisk it together for the allotted time rather than using a mixer.
