    Southwest Cheesecake

    Source of Recipe

    Internet

    List of Ingredients

    16 oz. cream cheese
2 cups sharp shredded cheddar cheese
2 cups dairy sour cream, divided (16 oz.)
1 1/2 packets taco seasoning (a packet has 4 tbs.)
    3 eggs, room temperature
1 can (4 oz.) green chilies, chopped and drained
    2/3 cups salsa-any temperature

    Recipe

Combine cheeses; beat untill fluffy. Stir in 1 cup sour cream and taco seasoning. Beat in eggs, one at a time. Fold in chilies. Pour into 8 1/2 inch springform pan. Bake at 350° for 35-40 minutes or till center is just firm. Remove from oven, cool 10 minutes. Spoon remaining sour cream over top of cake; return to oven for 5 minutes. Cool completely on wire rack. Refrigerate, covered, overnight. Remove from pan; place on serving plate, carefully! Top with salsa. Serve with tortilla chips.

Yield: 50 servings, at least that's what the claim was! I don't remember it ever serving that many but it is a large appetizer.
