    1 1/2 cups dried black-eyed peas
    3 cups cold water
    1 tablespoon plue 1 teaspoon salt
    6 slices bacon, chopped
    1 onion, chopped
    2 (or more) cups water
    3/4 cup long grain white rice
    salt and pepper to taste
    dash of hot sauce
    1/2 cup minced green onions, including tops
    3 tablespoons minced parsley

    Rinse and sort the peas. Place in a bowl and cover with 3 cups cold water. Add 1 tablespoon salt. Let stand for 8 to 12 hours; drain. Place in a large pot.

    Sauté the bacon in a skillet until crisp. Add the bacon to the peas, reserving the pan drippings. Add the onion, 1/2 teaspoon salt and 2 cups water to the peas. Bring to a boil. Lower the heat. Simmer for 20 minutes or until the peas are tender, adding water in 1/4-cup increments if additional liquid is needed; a small amount of liquid should remain.

    Place the rice in a saucepan. Cover with cold water. Bring to a boil and stir once. Reduce the heat to low. Simmer, covered, for 20 minutes. Add to the peas. Add 2 tablespoons of the reserved bacon drippings, salt and pepper to taste and hot sauce to the peas. Simmer, covered, for 15 minutes. Stir in the green onions and parsley.
