    Recipe Introduction

    Makes 48 bars

    List of Ingredients

    2 1/4 cups all-purpose flour
    2 1/2 teaspoons baking powder
    2 teaspoons ground cinnamon
    1/4 teaspoon salt
3/4 cup butter or margarine, softened
1 1/2 cups packed brown sugar
    1 teaspoon vanilla extract
    2 eggs
    1 cup solid pack pumpkin

    Maple Icing
    6 ounces cream cheese, softened
2 tablespoons butter or margarine, softened
    2 cups sifted powdered sugar
    1 teaspoon maple flavoring

    Recipe

    Preheat oven to 350 degrees.

Combine flour, baking powder, cinnamon and salt in medium bowl.

Beat butter, brown sugar and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Beat in pumpkin. Gradually beat in flour mixture. Spread into greased 15x10-inch jelly-roll pan.

Bake in preheated oven for 20-25 minutes or until wooden pick inserted near center comes out clean. Cool completely in pan on wire rack.

Spread with Maple Icing. Cut into bars.

    For Maple Icing:
Beat cream cheese and butter or margarine in small mixer bowl. Gradually beat in sifted powdered sugar. Beat in 1-2 teaspoons maple flavoring until fluffy.
