    S'MORE BROWNIES

    Source of Recipe

    Mimi's

    List of Ingredients

    Base:
3/4 cup finely crushed graham crackers
    3 Tbsp sugar
    3 Tbsp butter, melted

    Brownie layer:
1/2 cup butter, at room temperature
    2 oz unsweetened chocolate
    1 cup sugar
    2 large eggs
    1/2 tsp vanilla
    1/2 cup flour
3 oz milk chocolate, finely chopped

    Topping:
    11/2 cup mini marshmallows

    Recipe

Preheat the oven to 350. Line an 8 inch square pan with a double thickness of foil, letting the ends extend above the pan on 2 sides. Lightly grease the foil in the pan.

    Base:
In a small bowl, mix the base ingredients until well blended. Press evenly over bottom of lined foil.

    Brownie layer:
Melt the butter and unsweetened chocolate in a large bowl in a medium saucepan over low heat. Stir until well blended. Turn off heat, whisk in sugar, then egg and vanilla. Stir in the flour just until blended. Spread the batter evenly over the crumb mixture. Bake for 22 to 25 minutes until a pick inserted in the middle comes out with a moist crumb. Sprinkle the milk chocolate over the warm brownie and let stand for 5 minutes until the chocolate melts. Spread evenly.

    Topping:
While brownie is still warm, sprinkle marshmallow evenly over the top, covering the chocolate completely. Broil 5 to 6 inches from the heat source for 20 to 30 seconds, or until golden brown. Cool in the pan on a wire rack. When cooled, lift the foil by the ends onto a cutting board. Cut the brownie in bars using a lightly oiled knife to prevent the marshmallow from sticking.
