    (Swedish Christmas Sugar Cookies)

    List of Ingredients




    1 cup butter
    2 cups sugar, plus extra, divided
    2 eggs, beaten
    1 teaspoon pure vanilla extract
    3 ¾ cups all-purpose flour
    2 teaspoons baking powder
    ¼ cup cream
    1 egg white, slightly beaten



    Recipe



    Preheat oven to 350°. Cream butter and gradually add 1 cup sugar. Add eggs and continue to beat until light and fluffy. Beat in 1 cup sugar. Add vanilla. Add flour, baking powder and cream; mix well and chill. Roll out quite thin on a lightly floured board and cut with 3" cookie cutters. Brush with egg white and sprinkle with sugar (or decorate with other colored sugar or cookie decorations). Bake about 8 minutes. Makes about 88 cookies. Cookies may also be decorated after baking with colored icing.

    *(Decorative icing can be made by adding confectioner's sugar to remaining egg white until right consistency).
