    6 or 7 hard-boiled eggs
    2 tbsp. butter
    1 1/2 cups sliced onions
    1 tbsp. flour
    1 1/2 cups milk
    1/2 tsp. salt
    1/4 tsp. freshly ground black pepper
    1/2 cup grated Swiss cheese, or cheddar or a combination, including Parmesan

    Preheat the oven to 400ºF.

    Slice the eggs with an egg slicer or knife and arrange them in a buttered 4 to 6 cup baking dish.

    In a saucepan, melt the butter over medium-high heat and sauté onions until they just begin to brown, about 10 minutes.

    Blend in the flour and cook another 30 seconds.

    Stir in the milk, salt and pepper. Stirring constantly, bring to a simmer. Lower heat and simmer 1 to 2 minutes.

    Pour the sauce over the eggs and, gently lifting the egg slices, let it run in and around the egg.

    Sprinkle with the cheese an bake for 10 to 12 minutes. place under the broiler for a few minutes, until the top is nicely browned.

    Serve immediately.
