    2 lbs. lean ground beef
    2 eggs, lightly beaten
    1/2 cup bread crumbs
    1/2 cup green bell pepper; chopped
    1 lg. onion; chopped
    2 carrots; grated
    2 cloves garlic; crushed
    2 tbsp. soy sauce
    2 tbsp. brown sugar
    2 tbsp. lemon juice
    2 tbsp. fresh parsley; chopped
    3/4 tsp. ground ginger

    1/2 cup brown sugar
    1/2 cup soy sauce

    Recipe



    Combine all but last 2 ingredients. Form into 1 or 2 loaves and place in a 9x9-in. baking dish.

    Bake at 350ºF. for 30 minutes.

    Remove from oven and drain off grease. Mix together the brown sugar and soy sauce and pour over meat. Bake for 30 more minutes and remove meat to serving platter.

    Pour remaining sauce over sliced meatloaf or serve separately.
