    List of Ingredients




    1 cup flour
    1/4 cup sugar
    1 tablespoons baking powder
    ½ teaspoon cayenne pepper (optional)
    4 eggs
    4 tablespoons butter, melted
    ½ cup heavy cream
    4 ears corn, roasted or grilled, and cut from cob
    2 peppers, roasted, seeded, and chopped (poblano, bell, Anaheim or hatch peppers)

    Preheat oven to 350 degrees. In a mixing bowl, combine flour, sugar, baking powder, and cayenne pepper. Set aside. In another bowl, whisk the eggs, butter, cream. Add dry ingredients to the wet ingredients, and mix. Add peppers and corn. Place mixture in a buttered baking dish. Bake for 30 – 40 minutes until golden brown.

    Serves 8
