    (Serves 6)

    3 large potatoes
    5 slices bacon, diced
    1 small onion, julienned
    2 tablespoons unsalted butter, melted
    Salt and freshly ground black pepper
    3/4 cup sour cream, as garnish

    Recipe



    Boil the potatoes covered in water until fork tender. Drain and let sit until cool enough to handle, and then grate the potatoes and set aside. Heat a 12-inch non-stick pan over medium heat until hot, add the diced bacon, and sauté until the bacon begins to crisp, about 3 minutes. Add the onions and cook until the bacon is crisp and the onions soften and start to brown, another 3 to 4 minutes. Add the grated potatoes and mix well. Using a plastic spatula, shape the potatoes into a large pancake. Brush the sides of the pan with 1 tablespoon of the butter and cook the pancake until golden brown, about 5 minutes. Flip the pancake, brushing the reserved butter around the sides of the pan. Brown this side for about 5 minutes. Season well with salt and black pepper. Slide the pancake from the pan, cut into wedges, and serve garnished with sour cream.
