    10 oz. frozen spinach
    1/2 teaspoon salt
    1/4 teaspoon pepper
    4 tablespoons butter
    3 tablespoons flour
    1/2 teasoon salt
    1/8 teaspoon cayenne pepper
    1 cup of milk
    3 tablespoons grated Swiss cheese
    1/4 cup Parmesan cheese
    1/4 cup light cream
    8 small tomatoes

    Recipe



    Cook spinach slowly, without any additional water. Drain thoroughly and season with salt and pepper. Blend in milk. Stir over heat until it boils; add cheeses and cream. Simmer 5 minutes. Combine with spinach. Slice tops off tomatoes and scoop out all pulp. Salt inside of tomatoes. Stuff with spinach mixture. Heat thoroughly at 350° about 15-20 minutes. Five minutes before removing, sprinkle with Parmesan cheese. Serves 8.
