    Pesto & Sun-Dried Tomato Wrap

    List of Ingredients

    4 (8-inch) flour tortillas, you may substitute garlic & herb flavored tortillas
    mayonnaise
    4 teaspoons prepared pesto
    2 cups arugula, you may substitute torn romaine lettuce leaves
    1 package (10 ounces) cooked chicken breast strips, you may substitute 1-1/2 cups cut-up cooked chicken
    1/4 cup drained and chopped sun-dried tomatoes packed in oil
    1/4 cup pine nuts, toasted, (optional)

    Recipe

    1. Spread mayonnaise generously onto tortillas.

    2. Spread pesto down center of each tortilla. Top with lettuce, chicken, tomatoes and pine nuts.

    3. Roll & fold the filled tortilla.

    4. SERVING SUGGESTION: For the "basil and cheese lovers" in your group, add lots of fresh basil and shredded mozzarella cheese.
