List of Ingredients
1/2 c. black beans, rinsed and drained
2 T. chuncky salsa
1 T. chopped green onion
1 T. minced fresh cilantro
4 flour tortillas
1 medium tomato, chopped
1 cup shredded monterey jack cheese
2 - 4 T. butter or margarine Recipe
In a bowl, mash beans slightly. Add salsa, onions and cilantro. Spread over tortillas. Sprinkle with tomato and cheese. Roll up tightly. Melt butter in a large skillet. Add tortillas, seam side down; cook until golden on all sides.
