Orange Crepes

- Crepes
- 2 C. flour
- 6 T. confectioner's sugar
- pinch salt
- 2 T. unsalted butter, melted, room temp
- 2 C. milk
- 2 large eggs
- 1/2 t. vanilla
- vegetable oil
- 16 6x6 squares of waxed paper
Instructions
- Combine flour, sugar, and salt in large mixing bowl.
- In medium bowl, combine melted butter, milk, eggs, and vanilla and whisk until blended.
- Add liquid mixture, a little at a time to dry mixture, whisking until smooth.
- Lightly brush small nonstick skillet with oil and heat over medium heat.
- When pan is hot, remove from heat and pour in 1/4 C. of batter, swirl to spread evenly over bottom.
- Return pan to heat and cook until light gold about 30 to 40 seconds.
- Turn crepe and cook second side for about 15 seconds.
- Remove from pan, repeat procedure.
- Stack crepes between squares of waxed paper.
