    Scallops Baked with Mushrooms

    List of Ingredients


    • 1 lb. scallops
    • 3 oz. butter
    • 1/2 lb. fresh mushrooms, sliced
    • 3 stalks celery, diced
    • 1/2 small onion, finely chopped
    • 1/2 green pepper, minced
    • 1/8 t. basil
    • 2 C. white sauce
    • 1/2 C. cracker crumbs
    • 4 T. cheddar cheese, grated
    • parsley sprigs
    • White Sauce:
    • 2 oz. butter
    • 2 T. flour
    • 1/4 t. salt
    • 1 C. milk
    • 1/8 t. pepper


    Instructions


    1. Wipe scallops with a damp cloth and set aside.

    2. Melt 2 oz butter in a heavy saucepan.

    3. Add next 5 ingredents.

    4. Simmer gently 10 minutes until celery and mushrooms are tender, but not soft.

    5. Prepare white sauce.

    6. Add scallops to mushroom mixture; mix well.

    7. Heat 5 minutes and then add the white sauce.

    8. Pour mixture into 1 1/2 qt. buttered casserole.

    9. Cover wth cracker crumbs, then grated cheese; dot with remaining 1 oz. butter.

    10. Bake at 350 degrees for 25 minutes or until golden.

    11. Garnish with parsley.

    12. White Sauce:

    13. Melt butter; gradually add flour, stirring constantly.

    14. Add salt and pepper and slowly pour in milk.

    15. Stir sauce continually until it is very smooth and thick.
