    French Onion Soup

    List of Ingredients


    • 5 C. yellow onions, thinly sliced
    • 5 T. butter
    • 2 T. canola oil
    • 1 T. Dijon mustard
    • 3 T. Flour
    • 1 t. salt
    • 1/4 t. sugar
    • 1 C. dry white wine
    • 2 qts. boiling beef broth
    • 1 1/2 C. Gruyere cheese, grated
    • French bread rounds, toasted


    Instructions


    1. Heat oil and butter, add onions and saute' until dark brown, about 25 minutes.

    2. Stir in flour and mustard, cook for 2 minutes.

    3. Add salt, sugar, broth, and wine and simmer for 30 minutes.

    4. Pour soup into individual ramekins.

    5. Place toasted rounds on top and sprinkle with cheese.

    6. Heat at 475 until cheese melts, then broil until slightly browned.
