    Tomato Basil Soup

    List of Ingredients


    • 4 C. fresh roma tomatoes, peeled, cored, and chopped
    • 2 C. tomato juice
    • 2 C. vegetable stock ( can substitue chicken stock)
    • 12 to 14 leaves fresh basil
    • 1 C. heavy cream
    • 1 stick sweet unsalted butter
    • salt to taste
    • 1/4 t. cracked black pepper


    Instructions


    1. Combine tomatoes, juice and stock in saucepan.

    2. Simmer 30 minutes.

    3. Puree, along with the basil, in small batches, in blender or food processor.

    4. Return to saucepan and add cream and butter, while stirring, over low heat until well blended and heated thoroughly.
