    SWEET POTATO PECAN BREAD

    3 c sifted all purpose flour
    4 tsp baking powder
    1/2 tsp salt
    2 tsp nutmeg
    1 tsp cinnamon
    2 c cooked mashed sweet potatoes
    2 c chopped pecans
    1 c raisins
    2 c sugar
    4 eggs, lightly beaten
    1 c oil
    4 Tbsp milk

    Recipe



    Sift together first 5 ingredients.

    Stir in potatoes, nuts & raisins.

    With spoon, stir in sugar, eggs, oil & milk to blend.

    Grease bottom only of 2 loaf pans. Divide batter between pans.

    Bake at 325 degrees for 70 minutes.

    Cool 15 minutes before removing from pan.
