    Recipe Introduction


    Another one of those recipes I've had for years. It was usually only made around the holidays and I don't remember a Thanksgiving or Christmas with my mothers family without it.


    List of Ingredients


    • 1 #2 can crushed pineapple, drained
    • 1 cup sugar
    • 1 cup water
    • 1 pkgs Knox unflavored gelatin, disolved in cold water according to instructions on package
    • 1 large pkg cream cheese [or 2 small] at room temp.
    • 1 cup chopped pecans [Or walnuts]


    Instructions


    1. Boil sugar in water until dissolved.

    2. Add pineapple, and of the nuts to sugar mixture. Stir in gelatin.
      Pour 1/2 of mixture into serving bowl. Cool in refrigerator.
    3. Spread cream cheese over gelatin as soon as it is solid enough. Top with remaining gelatin mixture and refrigerate until serving.


    Final Comments


    The second half of the gelatin mixture may need softened to be spread evenly over the cream cheese--it can be done on the stove or in the microwave.

    The original recipe had all the pineapple and nuts in the top layer so you may want to increase both.
