    Curried Chicken Wings

    List of Ingredients


    • 1/4 cup butter or margarine,
    • 2/3 cup milk
    • 1/3 cup creamy peanut butter
    • 6 tbsp flour
    • 6 tbsp cornmeal
    • 1 tsp salt [optional]
    • 2 tsp curry powder [or more to taste]
    • 1 to 1 1/2 dozen chicken wings


    Instructions


    1. In blender mix milk and peanut butter. Beat well. [MUST use a blender or food processor for this step.]
    2. In shallow bowl combine flour, cornmeal.salt and curry powder.
    3. Cut wings into 3 pieces and discard "sharp" ends. Dip remaining wing in peanut butter then in flour mixture so they are throughly coated.
    4. Melt butter in baking pan in 400 degree oven. Lay wings in buttered pan and bake 15 min. Turn and bake 25 min more


    Final Comments


    This is not good on larger pieces of chicken, but it would probably work on boneless chic. breasts [or thighs] cut into strips
