    BARBECUE CHICKEN & CORNBREAD

    List of Ingredients


    • 1-1/2 lb boneless, skinless chicken breast
    • 1 (15oz) can red beans, drained
    • 1 (8oz) can hunts tomato sauce
    • 1/2 cup hunts Hickory Smoked BBQ sauce
    • 1 cup diced green bell pepper
    • 1 Jiffy cornbread mix
    • Ingredients to prepare cornbread mix


    Instructions


    1. Preheat oven to 375°.

    2. Dice chicken into 3/4-inch cubes. Heat nonstick skillet over medium heat, add chicken and cook until no longer pink

    3. Stir in beans, tomato sauce, bell pepper and BBQ sauce and simmer for 8-10 minutes.

    4. While chicken mixture is simmering, prepare cornbread mix according to package directions.

    5. Pour chicken mixture into a 8-inch baking dish and spoon cornbread on top and spread as best as you can.

    6. Bake 15-18 minutes or until toothpick inserted in center of cornbread layer comes out clean.



    Final Comments


    I use egg substitute to prepare cornbread mix! Using real egg may increase points.
