    MEXICAN CASSEROLE

    List of Ingredients


    • 1 lb ground turkey
    • 1/2 cup chopped onion
    • 2 cloves minced garlic
    • 3 cups cooked brown rice (without salt)
    • 1/4 cup sliced black olives
    • 2 tbsp Cilantro
    • 1 (28oz) can tomatoes, undrained and chopped
    • 1 (4 1/2oz) can chopped green chilies, undrained
    • 1 (1 1/4oz) package taco seasoning mix
    • Pam cookins spray
    • 1 cup reduced-fat monterey jac k cheese


    Instructions


    1. Preheat oven to 350°

    2. Cook first 3 ingredients in a large skillet over medium-high heat until beef is browned, stirring until it crumbles; drain and return to skillet.

    3. Stir in rice and next 5 ingredients

    4. Bring to a boil; reduce heat, and simmer uncovered for 10 minutes

    5. Spoon mixture into a 2qt backing disk coated with Pam.

    6. Bake uncovered for 15 minutes, sprinkles with cheese and bake 5 additional minutes or until cheese is melted.
