    Supreme Pizza Casserole

    12 ounces medium pasta, such as penne

    1/2 pound Italian sausage or lean ground beef

    1 medium onion, diced

    3 cloves garlic, minced

    1 cup vegetable pizza toppings, uncooked, optional, of your choice

    salt, to taste

    pepper, to taste

    1 (14-ounce) can diced tomatoes, drained

    1 teaspoon oregano

    1 teaspoon Italian seasoning

    14 ounces pizza sauce

    2 cups marinara sauce

    1 cup cooked pizza ingredients, optional, of your choice

    3 cups mozzarella and cheddar blend, shredded

    1 cup pepperoni slices

    1/4 cup Parmesan cheese, shredded

    Preheat the oven to 425 degrees F. Grease a 9×13-inch casserole dish.

    Cook the pasta to al dente, according to package directions. Drain the pasta and set it aside.

    In a large skillet on the stove top over medium heat, brown the Italian sausage and onions, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Season with salt and pepper. Drain the excess fat from the pan.

    Add the vegetable pizza toppings and cook until tender, about 3-4 minutes.

    Add the diced tomatoes, oregano, Italian seasoning, pizza sauce, and marinara sauce. Let simmer for 5 minutes.

    Add the cooked pasta to the sauce, tossing to combine. Add the cooked pizza toppings, tossing to combine.

    Pour the pasta mixture into the prepared casserole pan, spreading it into an even layer.

    Sprinkle the cheese blend on top. Layer on the pepperoni slices. Top with the Parmesan cheese.

    Bake uncovered until the cheese is browned, about 15-20 minutes. Serve hot.
