    Mexican Sausage Skillet

    12 oz chorizo or pork sausage (I used
    chorizo)

    2 cups whole kernel corn

    1 14 ½ oz can diced tomatoes

    1 cup uncooked instant rice

    ½ cup of water

    3 tsp chili powder

    1 tsp ground cumin

    1 15 oz can pinto beans, rinsed and
    drained

    ¾ cup shredded Mexican blend cheese

    Recipe



    1.Remove casing from sausage. Cook
    sausage; set aside.

    2. Add corn, undrained tomatoes,
    uncooked rice, water, chili powder, and cumin to skillet. Bring to boiling, reduce heat and simmer covered until rice is cooked (may need to add a little more water). Stir in beans and sausage, heat through. Sprinkle with cheese.
