    I thought this one was super good and very easy, the hardest part was chopping and cutting. I made it one time and knew it was a keeper. I can't wait to make it again.

    Prep: 30 minutes

    Cook: Low 9 hours, High 4 1/2 hours

    Makes: 6 to 8 servings

    Slow Cooker: 3 1/2 to 6 quart

    List of Ingredients




    1 1/2 pounds beef stew meat (I used chuck roast) 41.3 points
    4 tsp olive oil 4 pts
    1 cup thinly sliced carrots 1 pts
    1 cup sliced celery 0 pts
    1 medium onion, thinly sliced 0 pts
    1/2 cup coarsely chopped green sweet pepper 0 pts
    4 cups beef broth made from cubes 0.5 pts
    1 cup spaghetti sauce (I used delmonte mushroom flavor-1pt/cup)
    1 – 14 ½ oz can tomatoes, cut up or diced
    2/3 cup pearl barley (read below, 4 points)
    1 1/2 tsp dried basil, crushed 0 points
    1/2 tsp salt 0 pts
    1/4 tsp black pepper ( I used extra pepper) 0 pts
    1/4 cup snipped fresh parsley (I didn't have any so I left it off) 0 pts
    total points for this recipe is 51.8 using the numbers for chuck shoulder roast.

    Recipe



    1. Try to get the leanest cut beef roast you can if you don't want to use beef stew meat. I used chuck, so the points listed are for chuck. Trim off all visible fat, and cut meat into 1-inch cubes. In a large skillet brown meat, half at a time, in hot oil. Drain Well.

    2. Meanwhile, in your slow cooker combine carrots, celery, onion, and sweet pepper. Add broth, undrained tomatoes, spaghetti sauce, barley, basil, salt, and black pepper. Stir in browned meat.

    3. Cover; cook on low-heat setting for 9 to 10 hours or on high-heat setting for 4 1/2 to 5 hours. Skim off fat. Stir in parsley

    4. FOR THE BARLEY: I used the NI off the package, sunny select brand is 100 calories for 1/4 cup, with 5 g of fiber. To figure the points, I muliplied 100 by 4 to get one cup, then I multiplied 400 x .66 (to make 2/3 cup) that gave me 264 calories and the fiber can't go up because of fiber cap, the points calculator gave me a value of 4 points. However, the other way (listed by food) gave the same amount of barley as 8.5 points.
