Pecan Pumpkin Pie
This pie is a nice change from the average pumpkin pie that everyone bakes each year around the holidays.
List of Ingredients
- 2/3 cup chopped pecans
- 1/3 cup brown sugar
- 2 tablespoons soft butter
- 1 un-baked 9-inch pie shell
- 2 eggs slightly beaten
- 2/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 15-ounce can of pumpkin
- 1/4 cup evaporated milk
Instructions
- Preparation:
1. Preheat oven to 425 degrees.
2. Blend pecans, brown sugar, and soft butter.
3. Press into pie shell.
4. Mix remaining ingredients.
5. Pour into shell over pecan mixture.
6. Bake 15 minutes in 425-degree oven. Reduce to 350 degrees for 40 minutes. Pie is ready when knife inserted about 1 inch from edge comes out clean.
Cool on rack.
