    Rhubarb Custard Cake

    Recipe Introduction


    This is AWESOME. I took it to work and I got sooo many compliments. This is very simple to make.


    List of Ingredients


    • 1 pkg. (18 1/4 oz) yellow cake mix
    • 4 c. chopped fresh or frozen rhubarb
    • 1 c. sugar
    • 1 c. whipping cream
    • whipped cream and fresh mint, optional


    Instructions


    1. Prepare cake batter according to package directions. Pour into a greased 9 x 13 pan. Sprinkle with rhubarb and sugar. Slowly pour cream over top.
    2. Bake at 350 degrees for 40-45 minutes or until golden brown. Cool for 15 minutes before serving.
    3. Garnish with whipped cream and mint if desired.
    4. Refrigerate leftovers.
