Easy Beef Enchiladas

- 6 corn tortillas
- 2--10 oz cans enchilada sauce
- 1# hamburger
- 1 med. onion, chopped
- 1 Tbsp. canned chopped and seeded green chili peppers
- 1/2 c. chopped black olives
- 6 oz. cheddar cheese
Instructions
- Thaw frozen tortillas.
- Brown hamburger and onion. Mix hamburger with enchilada sauce, chili peppers, olives and part of the cheese. Spoon enchilada filling onto tortillas and roll up as a jelly roll.
- In greased cake pan arrange tortillas seam down.
- Pour remaining enchilada sauce over them.
- Bake at 375 degrees for 15-20 minutes. Sprinkle with cheese. Cover and cook until the cheese is melted.
- Serve with black olives on top.
