    Easy Beef Enchiladas

    List of Ingredients


    • 6 corn tortillas
    • 2--10 oz cans enchilada sauce
    • 1# hamburger
    • 1 med. onion, chopped
    • 1 Tbsp. canned chopped and seeded green chili peppers
    • 1/2 c. chopped black olives
    • 6 oz. cheddar cheese


    Instructions


    1. Thaw frozen tortillas.

    2. Brown hamburger and onion. Mix hamburger with enchilada sauce, chili peppers, olives and part of the cheese. Spoon enchilada filling onto tortillas and roll up as a jelly roll.

    3. In greased cake pan arrange tortillas seam down.

    4. Pour remaining enchilada sauce over them.

    5. Bake at 375 degrees for 15-20 minutes. Sprinkle with cheese. Cover and cook until the cheese is melted.

    6. Serve with black olives on top.
