    Rhubarb Custard Pie

    List of Ingredients


    • 2- 9 inch pie crust
    • 3 eggs
    • 3 tbsp. milk
    • 2 c. sugar
    • 1/4 c. flour
    • 3/4 tsp. nutmeg
    • 4 c. pink rhubarb, cut up
    • 1 Tbsp. butter


    Instructions


    1. Make pastry for two crust pie---9 inch pie.

    2. Beat slightly the eggs. Add the milk and mix. Stir in the sugar, flour and nutmeg.

    3. Mix in the rhubarb and pour into pastry lined pie pan. Dot with butter. Cover with a pie crust or lattice top crust.

    4. Bake until nicely browned---about 50 minutes at 400 degrees.
