Rhubarb Custard Pie

- 2- 9 inch pie crust
- 3 eggs
- 3 tbsp. milk
- 2 c. sugar
- 1/4 c. flour
- 3/4 tsp. nutmeg
- 4 c. pink rhubarb, cut up
- 1 Tbsp. butter
Instructions
- Make pastry for two crust pie---9 inch pie.
- Beat slightly the eggs. Add the milk and mix. Stir in the sugar, flour and nutmeg.
- Mix in the rhubarb and pour into pastry lined pie pan. Dot with butter. Cover with a pie crust or lattice top crust.
- Bake until nicely browned---about 50 minutes at 400 degrees.
