    Recipe Introduction


    This recipe is from a San Luis Valley cookbook that Elaine (April's great-aunt) sent Louise. Elaine's daughter and husband raise potatoes on their San Luis Valley farm in Colorado.


    List of Ingredients


    • 2 lbs. hamburger meat
    • 2 Tbs. finely chopped onion
    • salt and pepper to taste
    • 2 cans cream of mushroom soup
    • 1 cup grated cheese
    • 3 potatoes, peeled and sliced


    Instructions


    1. Mix the raw hamburger with onion, salt, and pepper.
    2. Press into a 13 X 9 casserole dish and cover with soup.
    3. Sprinkle grated cheese on top of soup and arrange sliced potatoes on top of cheese.
    4. Bake at 350 degrees for 1 to 1 1/2 hours or until potatoes are tender.


    Final Comments


    Serves 6 to 8.
