    List of Ingredients


    • 3 Tbsp. cooking oil
    • 1 cup uncooked long grain rice
    • 1 small onion (finely chopped)
    • 1 small green or red pepper (chopped)
    • 1 - 8 oz. can tomato sauce (or Rotel tomatoes, drained)
    • 1 cup chicken broth
    • 1/2 tsp. salt
    • 1/4 tsp. pepper


    Instructions


    1. Lightly brown rice in oil in a large skillet.
    2. Add onions and peppers. Saute until tender.
    3. Add the tomato sauce, chicken broth, salt, and pepper and cover tightly.
    4. Simmer 30-40 minutes until rice is tender.
